Shoyu Pork Local Style
Prepare Roast
•3-4 pounds pork loin roast...
•2 cloves garlic
•Oil

•Mixture:
•1½ cups shoyu
•3 cups water
•1 cup sugar
•¾ cup brown sugar, packed
•3 tablespoons mirin
•½ inch ginger, sliced and chopped
•1 clove garlic, chopped
•Garnish with green onions
Instructions
1.Pork roast may be sliced in half to speed up cooking time.
2.Brown garlic cloves in oil. Remove garlic.
3.Brown pork roast.
4.Combine remaining ingredients. Pour into pot over roast.
5.Bring to a boil and simmer for 1 hour. While simmering, turn roast over every 15
minutes.
6.Remove pork roast. Let cool. Then slice. Lay slices in a 9x13 inch baking pan.
7.Thicken sauce in pot with flour and water paste.
8.Pour thickened sauce over slices.
9.Cover and seal pan with foil.
10.Bake at 350 degrees for 1 to 1/1/2 hours

Homemade Pork Tocino
INGREDIENTS:
•3 lbs boneless pork shoulder roast...
•1¼ cups pineapple juice
•½ cup ketchup
•½ cup lemon-lime soda
•1/3 cup light soy sauce
•2 cups brown sugar
•1 tablespoon garlic, minced
•2 tablespoons salt
•1 teaspoon black pepper

INSTRUCTIONS:
1.Freeze pork shoulder roast for an hour or so to firm it up so that it’s easier to slice. Cut 1/4-inch slices of pork shoulder and place in a one gallon zipper-lock plastic bag.
2.Mix the rest of the ingredients in bowl and then add to the meat. Seal the bag, doing your best to remove excess air. Let the pork cure in the refrigerator for a 4-5 days, flipping over the bag every day or so.
3.After curing, you can either cook the meat or portion them off into smaller bags and freeze them.
4.To cook the tocino, add a little water, marinade and a few slices of meat to a skillet. Over medium heat, let the liquid boil off and then fry the meat for a couple more minutes to caramelize it. There’s a lot of sugar in the marinade so make sure you don’t burn the meat. You can also grill the tocino, by searing both sides on a grill over high heat and then letting them finish cooking over low or indirect heat. You can replicate this method indoors using a grill pan to sear and a low oven (around 250F) to finish

Sheet-Pan Chicken Fried Rice
1 package (20 oz) boneless skinless chicken thighs, cut into 1-inch pieces
3 tablespoons thick teriyaki sauce
2 1/2 teaspoons chili garlic sauce ...
1 tablespoon chopped garlic
2 cups matchstick carrots (from 10-oz package)
6 green onions, thinly sliced, whites and greens separated (about 1/2 cup)
2 packages (10 oz each) frozen cooked long-grain white rice, heated as directed on packages (about 4 cups cooked rice)
1/2 cup frozen peas, thawed
1/4 cup soy sauce
1 tablespoon vegetable oil
6 eggs
2 teaspoons toasted sesame seed
Sriracha sauce, if desired


Steps
1
Heat oven to 450°F. Generously spray 18x13-inch rimmed sheet pan with cooking spray. In medium bowl, toss chicken, teriyaki sauce, 1 1/2 teaspoons of the chili garlic sauce and the garlic.

Add chicken mixture to sheet pan, spreading evenly. Bake 7 to 9 minutes, stirring halfway through bake time, until chicken is no longer pink in center. Remove mixture from pan to small bowl; cover and keep warm. Spread carrots and whites of green onions evenly in pan; bake 6 to 8 minutes or until vegetables start to soften.

In medium bowl, mix rice, thawed peas, soy sauce, oil and remaining 1 teaspoon chili garlic sauce. Add rice mixture to vegetable mixture in pan; mix well, spreading evenly. Bake 8 to 10 minutes or until rice starts to brown; remove from oven, and stir in chicken.

Create 6 wells in rice mixture. Gently crack an egg into each well; bake 7 to 9 minutes or until egg yolk and whites are firm. Garnish with sesame seed and greens of green onion. Drizzle with Sriracha sauce
