Kailua Elementary's Shortbread Cookies
1/2 lb Butter
2 Eggs
1 C Sugar 3 C Flour
2 tsp Vanilla
Cream butter with sugar first. Add vanilla and eggs. Add flour. Mixture will be very dry. Drop by teaspoon on un-greased baking sheet, or for the traditional kind, press down on a un-greased cookie sheet with sides. Bake at 300 degrees for 40 min. or until done. Cookies will not brown. Cut while still hot. Don't over cook.

Preheat oven to 300 degrees. Spray a 9x9 square pan with cooking spray. Cream the butter with a mixer and gradually add the sugar. Beat until light and fluffy.
Gradually mix in the flour and salt by hand until well combined and crumbly. Press the mixture into the prepared pan and prick the top with a fork. Bake 50-60 minutes or until golden brown. Cool slightly and cut into bars. (Don't wait too long to cut them or they will break apart).

Portuguese Bean Soup
Portuguese Bean Soup
This is for use in crock pot.
Add ingredients in following order

1lb or Package of favorite Hawaiian Portuguese Sausage, cubed
1lb Ham, cubed
2 Medium Carrots, chopped
1 Large sweet onion
2 Teaspoons ground black pepper
1 Tablespoon garlic salt
1 Potato, cubed
1 can (15oz) Dark Red Kidney Beans, rinsed & drained
1 small head of cabbage, chopped
1 can (12oz) tomato paste
1-2 cans water, use tomato paste can for measurement.
Cooking Process:
Combine all ingredients above in order. Add 1 can of water. Set crock pot on "high" for 4 hours. Add another can of water and set crock pot on "low" for remaining 2 hours, stir about every 30 minutes.

Roast Pork ( Pork Butt ) and Gravy
4 lbs pork butt
Salt and pepper, to your taste

3 packets pork gravy

First cut 3-4 slices in the front and back of the pork and season with salt and pepper to your liking. Bake at 350 in a greased 13x9 baking pan for 3-4 hours all depending on your oven. Make sure to check on pork the first hour and a half to turn it over so it can cook even on the other side
(cook pork until it forms a nice crispy skin on both ends and then take it out to slice down the middle making sure there is no blood)
When pork is done take it out slice into 1-2 inch slices, remove any oil thats left in the pan but leave the porks drippings behind in the pan.
Last add 3 1/2 cups water into a large cup with the 3 packets pork gravy, stir well (do not heat) add it over your sliced pork and cover entire pan with tin foil and let it slow bake for 1/2 hour more at 250 degrees.(this will make your pork so soft you won't believe your taste buds)
When pork is done take it out slice into 1-2 inch slices, remove any oil thats left in the pan but leave the porks drippings behind in the pan.
Last add 3 1/2 cups water into a large cup with the 3 packets pork gravy, stir well (do not heat) add it over your sliced pork and cover entire pan with tin foil and let it slow bake for 1/2 hour more at 250 degrees.(this will make your pork so soft you won't believe your taste buds)
