Miso Yaki Butter Fish
Ingredients:
2 1/2 lb butterfish
2/3 cup miso (Japanese fermented soybean paste)
2 tablespoons soy sauce
3 tablespoons sake (rice wine)
1 tablespoon lemon juice
2 1/2 tablespoons sugar
1/2 teaspoon minced ginger root
1/3 cup chopped green onions

Directions:
Rinse and wipe butterfish. In large bowl, combine remaining ingredients. Soak butterfish in miso mixture at least 4 hours. Place fish on rack of broiler pan and broil 5 inches from unit in electric oven for 6 to 8 minutes; turn and broil 6 to 8 more minutes. Makes 6 servings.

1/2 lb Portuguese sausage, chopped

4 tablespoons shredded Parmesan cheese

Directions:
In a large skillet, heat oil and cook sausage for a few minutes. Add onion, bell pepper, and celery; sauté until onion is transparent. Add water and seasoning; cook for 2 to 3 minutes. Stir in cornbread and 2 tablespoons of the cheese. Place in casserole dish, top with the remaining 2 tablespoons cheese, and bake at 325°F for about 30 minutes or until heated. Makes 8 to 12 servings.
